     The term "organic wine" is in most cases a misnomer.  A true organic wine can have no added sulfites so most of what has been called organic can now only be referred to as "wines from organically grown grapes", courtesy of the USDA's National Organic Program (NOP).  The total lack of sulfites can render a wine unstable, and these wines are very low in numbers.  There is certainly support for the few winemakers working on means to eliminate use of sulfites, but with the highest amount of sulfur dioxide permitted  in wines made from organically grown grapes(100ppm), the wine is still 99.99% organic!
     Organic vineyards use organic methods, like hand picking and selection which greatly reduces stress and damage to the vines.  Organic vineyards also have a natural resistance to pestilence and poor weather, performing with more abundance in inferior vintages than non-organic ones.

     National Organic Program, a recent creation of the USDA, now defines an organic wine as "a wine made from organically gown grapes and without any added sulfites".  This restriction now excludes the vast majority of what used to be considered organic wine.   They are now referred to as "wines made from organic grapes" (or organically grown grapes) and are allowed to contain up to 100 ppm of added sulfites.  Wines without any added sulfites are very rare and apt to decompose and become unstable, resulting in a poor reputation of organic wines, (but  very effective mitigation to this is the product offered by GEOLIFE). The wine industry cannot refer to its organic product as "organic" even though the ingredients are more than 95% organic.  In fact, even with the permitted maximum amount of 100 ppm SO2, that percentage is still 99.99% organic.
